Parsley Salad

Parley is an often underused leafy green, usually relegated to the side of the plate as a garnish only to be tossed aside. So sad. Parsley is delicious and super good for you! Parley is well used in detox remedies, but it can be eaten on a regular basis to support liver detoxification, healthy skin, digestion….and of course, excellent breath! Most important of all though, it tastes great! Shake up your usual side salad by serving this instead! Try it topped with sliced and grilled steak …..delicious!!

  • 1 large bunch parsley, washed and dried (about 3 cups before chopping)
  • 1 red pepper, diced
  • 1 container (about 1.5cups) grape tomatoes, cut in half
  • 1/4 cup chopped red onion
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • salt and pepper to taste

Finely chop the parley either by hand or throw it in a food processor for a whirl! If you are chopping by hand it may take a bit, do it in batches so that you don’t make a mess! (the finer it is chopped the better in my opinion). Add the onions, red peppers and tomatoes and toss with the olive oil and vinegar. Simple as that. Depending on the size of the bunch of parley you may want a bit more or less oil and vinegar, so let your taste buds guide you as well. I like it topped with fresh ground pepper as well. Daily detoxification made delicious!
